Bedtime antipasta
It’s almost midnight, and while I don’t usually eat before bedtime, I couldn’t help my cravings for a small bite to eat. I scoured the fridge for left overs, but the fridge was void of any Tupperware—signs that Mom and Dad must have “picked” for dinner. I had no other choice but to fend for myself, and so I spent over 15 minutes preparing a delicious, bedtime antipasta filled with a medley of wonderful morsels: prosciutto, capricolla, arugula, tomatoes with mozzerella, green olives, pepporchinis, and Triscuit crackers with smoked gouda—all lovingly drizzled with olive oil and red wine vinegar.
Damn, I love being Italian.
